Sous Chef

We require a Sous Chef with extensive knowledge on food production, food processing customer service, administration and management.  Daily duties includes:  monitoring sanitation practices, checking and serving quality meals on time, calculate costs of supplies i.e. ingredients and calculate accurate gross profit margins.
 
This role requires an individual who is an effective people manager and leader, therefore providing efficient instructions to cooks and waiters in the preparation, cooking, garnishing and presentation of food while never compromising on quality.  Must be capable to supervise, coordinate, communicate and manage the other chefs without micro-managing the kitchen.  People management and relationship building with suppliers and staff is key. 
 
REQUIREMENTS:
• Showing competence and evidence of the list of knowledge, skills, abilities and other qualities outlined in the job description
• Minimum 5 years’ experience of being a sous-chef in a busy kitchen
• Evidence of work-related training, either formal education or on the job
• Ability to effectively communicate with different stakeholders, including owners, general manager, suppliers and staff
• A 2 year program or training in sanitation and safety of food preparation
• Extensive knowledge of food ingredients and use
• Ability to manage stock levels so that wastage and shrinkage does not exceed 3%
• Ability to take accurate stock on a weekly basis
• Ability to produce reports reflecting the accurate discrepancy between actual stock versus system stock on a weekly basis 
• Evidence of excellent leadership skills and experience
• Excellent time management
• Administrative skills and competence on computer programs such as Pilot Point of Sale software, Microsoft (Excel and Word) and Outlook Express
• South African citizenship
Must reside in Helderberg area

• Bilingual
• Own transport
• Baking skills
